Today I had, what i called a “basil” emergency. I had promised to make a fresh basil pesto to go with the baked spaghetti squash, but when i went to pick up the basil leaves from my regular supplier, they were clean out!!

To a normal, rational person, this would not be a big deal. You would just go to any grocery and buy some. However, this is me we’re talking about. Rational and normal do not enter the conversation when i’m in the kitchen and in cooking mode. Not to mention i needed a mother-load of basil and grocery prices are through the roof!

I was quite upset to say the least and loosing time trying to figure out my next move. You see, once i’ve promised to make something, i don’t like to back track, especially on new customers, like i had today.

After a “mild” panic, the clouds parted and the universe shone it’s wisdom on me. I suddenly remembered that my sister-in-law and one of my neighbours both grow basil in their non-gmo/organic gardens! Needless to say, my sister-in-law and neighbour saved the day for me and i was able to get enough fresh basil for the pesto, thereby making good on my promise to my customers.

Now again, any practical/sane person would say “that’s not a miracle”, but in my in my head it was. I was frustrated and in a bit of a panic as to what to do, and with time running out. The universe sent me a solution to ease my worries. Any time my worries can be put at ease, is a miracle to me:)

Thank you Universe for rescuing my meal!
To my customers, hope you all enjoyed it!
