Diabetes is not just for people who are overweight. More and more studies have concluded that this disease is actually caused by an autoimmune response. What many people don’t realize is that when your body digests carbohydrates, they become glucose (or sugar) in your bloodstream. If you have noticed a “crash” around 30-60 minutes after a high carbohydrate meal, this is why. Your body is responding to the high amounts of sugar in your blood.
