Protein Power Pesto

Sorry Kermit, you were wrong . . . it IS easy being green, if you know how to keep it clean!

I’m sure there are many of you out there, especially busy parents, who can relate to having every minute of your waking time being used up. I can’t help you with your schedule, but I can take meal planning off your shoulders.

Here is this week’s menu –

Menu – Please note:  our cut-off ordering times have changed for this week.

Monday – Love those Lentils
– Millet/quinoa mix
– Trinidadian style stewed brown lentils
– Trinidadian style bok choi
– boiled and “fried” green bananas
– Cancer-fighting salad
*** please place your order anytime BEFORE 9am on Monday.

Wednesday – It’s not easy being green, unless you know how to keep it clean
– power protein pesto
– zucchini noodles
– lemony/garlic brussel sprouts
– smoked paprika cabbage
– Cancer-fighting salad
*** please place your order anytime BEFORE 9pm on Tuesday

Friday – Not just for Falafels
– roasted portobello mushrooms
– lentil tahini delight (lentils, red peppers, quinoa, parsley)
– sweet potato/kale warm salad
– Cancer-fighting salad
*** please place your order anytime BEFORE 6pm on Thursday

All meals are anti-inflammatory, Cancer-fighting, MS-fighting, Diabetic friendly, heart healthy and gluten free.

I was inspired by my loved ones to reach out to people who have Cancer, Multiple Sclerosis, Diabetes and other debilitating illnesses. I learned to prepare food for people who need to consume a certain diet, in order to stave off their symptoms and/or help fight their illness, but have neither the physical strength, capability nor time to cook for themselves.
